Very tired. I’ve been cooking up stuff all weekend as a comfort routine, inbetween catching up on sleep and watching Familiar Faces. This weekend I made:

  • Red wine risotto with mushrooms, from Not Your Mother’s Slow Cooker Recipes for Two. Very good use of the Merlot I bought.

  • Dairy-Free Herbed Cream Cheez, from a mash-up of recipes from Go Dairy Free and The Ultimate Uncheese Cookbook.

  • “Sausage”-Veggie-Egg casserole; if it turns out good tomorrow morning, I’ll post the recipe. If not, well, another experiment. The sausage was replaced with TVP reconstituted in beef broth, the veggies were what I had left over (sliced mushrooms and baby bell peppers), and I blended in four tablespoons of nutritional yeast flakes for hopefully a cheez kick tomorrow. In the oven it inflated rather like a souffle, and then deflated after a few minutes out of the oven to my disappointment.

Tomorrow I’ll make either paenang tofu or mabo tofu, depending on the state of the Thai basil leaves. Both accompanied by short-grain rice and snacking on the last of the baby bell peppers.

The day after that I’ll make sizzling “pork” noodles, accompanied by broccoli (frozen right now, but will be steamed).

I don’t know what to do the day after that; but I plan on making baked macaroni and cheez on Thursday, which will involve buying some white wine (I’m not going to use the rose wine, as it’ll likely be too sweet).

I’m in a lot of need of comforting. :(
